Culingiones - Sardinian Ravioli with Spinach and Cheese

Cook: 10 minutes (plus sauce)
Serves 6

Sardinian version of an Italian favourite.

The Pasta:
4 cups all-purpose (plain) flour
1/4 tsp salt
5 eggs

The Stuffing:
3/4 pound spinach
pinch of salt
2 tablespoons butter
3/4 pound fresh Pecorino cheese
3 eggs
3/4 cup grated Parmesan cheese
pinch saffron
pepper
freshly grated nutmeg


The Sauce:
serve with tomato, meat and tomato, butter and sage.
